Listening to my doctor and new consumer demands, I found her essay,“Keep It Colorful,” that choosing foods representing the colors of the rainbow leads to healthful eating. Ranging from the colors of reds and oranges to that of yellows and greens, along with blue, indigo and violet provide fiber, minerals, many antioxidants and Vitamins A, B, C, D and K. The reds provided by phytonutrients in tomatoes and red peppers; oranges found in carrots and sweet pota- toes with beta-carotene; yellow of carotenoid zeaxanthin in corn and yellow bell peppers; flavonoids, beta-carotene and lutein in greens of asparagus to avocados; and violets and blues with anthocyanins of eggplant and red cabbage form a healthy colorful cornucopia. These natural-appearing chemical compounds are produced to help protect plants from disease, insects and other threats and have been shown to reduce the risk of cancer, heart disease, stroke, Alzheimer’s and Parkin- son’s disease and combined with the minerals and protein of my favorite entree, American beef, communicate culinary satisfaction.
