The history overflows out of each building from either things that actually happened at that location or is being celebrated there. From the cattle drive reenactment to the century-old steakhouses there is something for everyone. One of these steakhouses, H3 Ranch, is connected to the oldest hotel in the stockyards. The authentic décor is over the top – old ranch items everywhere you look and a live hickory wood fire in the center where they grill up the grub. Make sure to wear boots so you can enjoy that familiar click-clack as you walk across the original wood floors. As you open your leather-bound menu lit by a branding iron candlestick, you’ll notice they have a little something for every set of taste buds. Celebrating the local history, they have two entire pages dedicated to beef dishes, but we were there for the steak. I ordered their ribeye flanked by fire-roasted corn, ranch- style fries and an appetizer of tableside guacamole. The guaca- mole was incredible and fresh. Because they make it tableside, you get to taste the batch and request more seasoning to make it your style. There’s nothing quite like the smell of a freshly seared steak, or the taste of one for that matter. The ten- derness and flavor profile was on point, and the sides just took it all through the roof. The steak was so good that when I realized mine was gone, I reached over and snagged a bite off my husband’s plate when he wasn’t looking (but he doesn’t need to know that). The laid-back atmosphere allowed us to enjoy our meal without feeling rushed, so we hung around a little longer when we were finished. I highly recommend if you ever find yourself in the area to have a bite and take a walk through the old stockyards. If you listen closely, you can almost hear the auctioneer calling and cowboys yelping along with the click-clack of hooves on the old brick paths. 
